H received less-than-stellar health bill this morning. Nothing new, nothing serious. But he needs to really change his diet. But what does a wife do when he requested something like chicken cutlet?
#1. Single breast meat thinly sliced into 3.
#2. Pan fry the meat for colour then bake it for 10 mins.
#3. Steam the vegetables. Pan fry shallots till it just starts to brown and turn off the fire. Pour the steam vegetable into the pan, mix well. Season with dried herbs, salt & pepper.
I always add grated parmesan in my breadcrumbs. It adds oomph and fragrance. Try it!
