For The Love of Mango




I wanted to make fish tacos with mango salsa, but heck, when I saw beautiful bread, we decided to have fish burger instead. It was so so light and refreshing. All thanks to the Mango Salsa.

MANGO SALSA
(adapted from Simply Recipes)
serve 2

1/2 mango, diced
1/3 cucumber, diced
2 shallots, minced
1 tbsp minced cilantro
1 tsp minced red chili
1/2 lime juice
salt
pepper 

  • Mix all ingredients together. Adjust the taste to your liking.



FISH BURGER WITH MANGO SALSA
serve 2

2 white fish fillet
2 bread buns
butter
salt
pepper
mayonaise

  • Season the fish fillet with salt, pepper and some flour. Pan fry. Using your fork, roughly break the fish into pieces.
  • Toast the bread with some butter till brown and little crispy.
  • Assemble the burger by first laying the fish, followed by the mango salsa and finally add some mayonaise.
