MEDITERRANEAN CHICKPEAS AND TABOULEH SALAD
(inspired by My Recipes)
1 packet of 200g instant tabouleh
1 can chickpeas, drained
half large red bell pepper, diced
1 tbsp sun dried tomatoes, drained and chopped
handful or arugula salad
handful of chopped walnuts
4 tbsp of EVOO
juice of half lemon
- Prepare the tabouleh as per instruction
- Mix all ingredients together, except the arugula salad. Keep in the fridge if not serving immediately.
- Add the arugula right before serving. No seasoning needed!
