I’ve been struggling with cooking the past few days when we’re barely scrapping by with water. One plate meal, mostly. Like this bowl of macaroni, white beans and beef.
To be honest, I was aiming for Hoppin’ John, a dish that’s popular in the Southern States of US and Caribbean drawing its line back to West Africa, consisting of black eyed peas, rice and pork. Usually eaten during new year, they say it brings good luck. I’m praying for water, actually.
No such luck. But hey, like what the aussies or kiwis say, it’s hump day!
