Basic PlantSpaghetti
These two combined, they make a really good meal. But when added with avocado, they define a new standard all together. I’m not kidding.

Creamy Avocado Spaghetti 2
I adore a good bowl of creamy pasta, but sometimes they aren’t exactly good for your waist. And they are good only up till the point the cream got too much. But this.. this is different.

Creamy Avocado Spaghetti

The sauce is very smooth and creamy and delightful. The basil gives a nice fragrant, the cheese a nice bite, the avocado hugs you. It is simple. And there’s many permutation you can do with it. I added lemon, salt and black pepper and couple drops of tabasco to give a nice zing.

You can add shredded chicken, bacon, sun dried tomatoes if you prefer. Just give this a chance and see if you like it. We love it.

Serves 2

Spaghetti enough for 2
One medium-size ripe avocado, pitted and scooped out
juice of half lemon
1 clove garlic
1 tbsp EVOO
handful fresh basil
1/3 C parmesan, grated – more if required
Lots of salt
Black pepper, optional
Tabasco, optional

  • Prepare the spaghetti to al dente.
  • In a food processor, combine avocado flesh, lemon juice, garlic, olive oil, basil and salt. Blend until smooth and creamy. Taste and adjust seasoning.
  • Transfer the avocado sauce into a big bowl, add the cooked spaghetti and a generous black pepper.
  • Toss the mixture well, transfer to serving plate and top with additional parmesan. Tabasco is optional, but recommended.
  • Serve immediately.

I really need to yoga and run more often, especially since I’m still giving myself extra serving of Coconut & Lime Panna Cotta. It is too, too good.
