Bejewelled Pilaf RiceI dreamt of curry, a very spicy curry and made this to accompany. The sweetness helps to temper the heat scorching in the mouth.

BEJEWELLED PILAF RICE
(serves 2)

2 serving of cooked basmati rice
1 tbsp butter
1 tsp of mustard seeds
2 tbsp dried cranberries
2 tbsp chopped pistachio
2 tbsp chopped dried peach
salt
pepper

  • In a non-stick pan, melt the butter and add the mustard seeds.
  • Once the seeds have popped, add the cooked rice. Toss the rice and let it coated by the butter evenly. Season with salt and pepper.
  • Add the dried fruits and the pistachio, stir until combined.
  • Serve warm.
