Closest I Get

It’s been awhile since I last did Triple Play (y’know, one ingredient three ways..) but I didn’t buy enough of prawns to do any of the recipes justice. So for now, I’m pretty contented with two-way prawns.

Grilled Prawn with Cilantro, Lime and Peanuts

This is a simple grilled prawn, sprinkled with honey, lime and fish sauce mixture before finally tossed with chopped cilantro and toasted peanuts. I love this. The flavor reminds me what I love about Vietnamese, Thai or Cambodian cuisine. H doesn’t dig the sauce though, something about fish sauce that’s holding him back. He adores the Tamarind Prawn but not this one. Oh well, more for me!

serve 2-4

juice of half a lime

zest of 1 lime
1 tsp fish sauce
1/2 tsp honey

Abt 220 gr (8oz) prawns, deshelled, deveined, tails on
2 tsp oil
Ground black pepper
1 tbsp chopped cilantro
1 tbsp peanuts, chopped and toasted

  • In a small bowl, mix the lime juice, lime zest and honey. Whisk until the honey is diluted before adding the fish sauce. Taste and adjust seasoning if needed.
  • Season the prawns lightly with salt and black pepper.
  • Heat up the grill, add the oil and carefully grill the prawns on both sides until pink and firm to the touch.
  • Transfer the prawns to serving plate, dribble with the sauce. Add in the peanuts and cilantro, toss well and serve immediately.
